Friday Frittata

I found a great recipe for our Easter lunch.

Frittata
8 Eggs
¾ Cup Milk
3 Roma Tomatoes, seeded and chopped
250g Buttons Mushrooms (or brown ones), cut into quarters
6 Fresh Chives, chopped
½ Teaspoon Salt
½ Teaspoon Ground Pepper
½ Cup Grated Parmesan Cheese

Preheat the oven to 180ºC.  In a large bowl, whisk eggs and milk together until well blended.  Add tomatoes, mushrooms, chives, salt, and pepper.  Stir again.  Spray a 9 x 12" baking pan with vegetable oil cooking spray.  Pour mixture into the pan and sprinkle cheese evenly on top.  Bake for 20 to 30 minutes, or until browned on top. Serve at room temperature.
Serves 6
